White truffles or Alba truffles flourish not only in Alba from September to December but also in many other regions of Italy as well as in Istria (Croatia) and parts of south-eastern Europe. The area of origin serves as an important indicator of the quality of white truffles; however, even regions famous for their truffles, such as Piedmont, occasionally produce poor quality truffles and, vice versa, less renowned regions can provide really excellent truffles when the conditions are right. This depends on a number of different factors such as the weather, soil conditions, precipitation in summer, winter frost, the phase of the moon and the microclimate, etc. At the end of the day, each truffle must be classified individually – and there are always good, reasonable and bad ones, no matter where they come from. It is our task – and our passion – to make this selection for you. White truffles are consumed by grating thin shavings directly onto a serving of warm food.
