The autumn truffle
or Burgundy truffle
is to be found from September to December. It is more expensive than the summer variety due to its more intensive fragrance and taste, and the colour is darker right from the start. The experts cannot agree whether the tuber uncinatum is a species of its own or a subspecies of the tuber aestivum. The Italian language classes them both as scorzone: scorzone estivo for the summer truffle and scorzone invernale for the autumn variety, which is basically to be found in the same regions as the summer truffle.
