TUBER aestivum

The season for this summer truffle lasts from May to August. At first it is completely white inside, darkening towards maturity (round about June). The Italians call them scorzone and they are to be found in Italy, Spain, France and in large sections of eastern Europe as well as in western Asia. They have even been sighted in Germany, where they are protected, and occasionally in northern Europe. This little sister of the Périgord truffle does not offer such an intensive taste experience, but is considerably less expensive.
